The Alta Langa Rosé Sparkling Wine signed by the Cascina Pastori Colombo winery is a very interesting product. Firstly because it comes from a relatively "new" area for the production of Classic Methods, namely Alta Langa, and secondly because the wine is "signed" by the hand of the great Riccardo Cotarella, a winemaker of proven fame. The combination of these two circumstances makes the tasting rich in expectations, which are not betrayed. The bubble is well constructed, with an intense fruity nose and a sip in balance between structure and freshness, which enhances the silkiness of the perlage. A label that deserves a careful tasting, and that will take very little time to satisfy you.
The Alta Langa Sparkling Wine is a rosé that Cascina Pastori Colombo produces starting from the pure use of Pinot Nero grapes. The vines grow using the guyot system in Bubbio, in the province of Asti, at an altitude of about 250 meters above sea level, and are 10 years old. The must obtained from pressing the grapes ferments in steel tanks at low temperatures – between 12 and 13 degrees – and then referments following the principles of the Method Classic in the bottle. The Sparkling Wine then remains to age on the lees for a total period of five years.
The Alta Langa Sparkling Rosé Cascina Pastori Colombo presents itself to the eye with a color reminiscent of onion skin, crossed by a grain of fine and persistent bubbles. The small forest fruits dominate the olfactory scene, then continuing to express different delicate floral nuances.
