The Cerasuolo d'Abruzzo Superiore from the family-run Praesidium winery is a label that stands out for its genuine and authentic essence, as well as for its tasty and structured flavour. Praesidium is a small winery in the hinterland of L'Aquila, passionately run by the Pasquale family, represented by Enzo and Lucia and their children Antonia and Ottaviano. Cerasuolo d'Abruzzo represents for the family the freshest and most accessible declination of their Montepulciano, not without intensity and robustness, thanks also to the period of about two days that the must spends in contact with the skins, acquiring structure, aromas and colour.
Praesidium Cerasuolo d'Abruzzo Superiore is made from pure Montepulciano grapes from several hillside vineyards located at an altitude of approximately 400 metres above sea level. In particular, the vines are grown according to certified organic farming principles on clay soils characterised by a high presence of skeleton, siliceous pebbles and limestone. Harvesting is carried out strictly by hand and the grapes are then vinified in stainless steel tanks with spontaneous alcoholic fermentation associated with approximately two days of maceration on the skins. Once the fermentation process is complete, the wine is left to mature for at least 6 months, again in stainless steel, until final bottling. Throughout the entire process, no additives or oenological aids are used, except for very low doses of sulphur dioxide, added only when the wine requires it.
The Cerasuolo d'Abruzzo Superiore Praesidium has a lively cherry-pink hue. On the nose, decisive and evocative notes of black cherry, raspberry and wild flowers emerge, enriched by fresh and iodine sensations and mineral hints of graphite on the finish. The taste is very fresh and savoury, almost saline, characterised by a full and rounded progression with a long mineral persistence.
